Dough & Knots
- 24 oz. pizza dough (homemade or store-bought)
- 1 Tbsp olive oil
- ¼ cup unsalted butter (melted)
- 2 Tbsp Parmesan cheese (grated)
- 1 tsp garlic (minced)
- 1½ tsp Italian seasoning
- ½ tsp kosher salt
Dip
- 8 oz. cream cheese (softened)
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- ½ cup ricotta cheese
- 1 Tbsp milk
- ¼ cup chopped fresh basil
- 1½ tsp minced garlic
- 1 tsp red pepper flakes
- Prepare Skillet: Brush a 9” or 10” cast iron skillet with olive oil. Place a small bowl or crock in the center of the skillet and set aside to create space for the dip.
- Divide Dough: Cut the pizza dough into 12 equal pieces (about 2 ounces each), then cut each piece into 3 smaller pieces.
- Shape Dough Balls: Roll each small piece between your palm and countertop in a circular motion until tight dough balls form. Toss the balls in olive oil in a large bowl to coat them evenly.
- Arrange Dough Balls: Place the olive oil coated dough balls evenly around the outside of the prepared skillet, encircling the bowl in the center. Cover the skillet and let the dough rise in a warm spot for 1 hour (such as an oven with the light on).
- Preheat Oven: Set your oven to 375°F to preheat while dough rises.
- Make the Dip: In a medium bowl, mix together softened cream cheese, shredded mozzarella, grated Parmesan, ricotta, milk, chopped fresh basil, minced garlic, and red pepper flakes until smooth and well combined.
- Assemble Dip: Remove the cover from the skillet, take out the small bowl, and spoon the prepared dip into the center opening in the skillet.
- Bake: Bake the skillet at 375°F for 28-30 minutes until the dip is lightly browned on top. Optionally, broil for 2-3 minutes afterward to brown the cheese further.
- Prepare Garlic Butter: While baking, whisk melted butter with grated Parmesan, minced garlic, Italian seasoning, and kosher salt to create the garlic butter mixture.
- Brush Garlic Knots: Remove skillet from oven and generously brush the garlic butter mixture over the baked dough balls. Let cool slightly before serving.
Notes
- For a warm rising spot, placing the skillet in an oven with just the oven light on works well to help dough rise.
- If you don’t have a cast iron skillet, any oven-safe skillet of similar size can be used.
- Broiling after baking is optional, but adds a lovely golden brown crust to the dip’s cheese topping.
