This White Lasagna Stuffed Peppers recipe offers a flavorful and comforting twist on traditional lasagna by using sweet bell peppers as edible vessels, stuffed with ground turkey, ricotta, and mozzarella cheese. It’s a delicious, baked dish perfect for a wholesome family dinner that combines the richness of lasagna in a lighter, veggie-packed presentation.

Ingredients

Scale

Peppers

  • 2 large sweet peppers, halved and seeded

Seasonings

  • 1 teaspoon garlic salt, divided

Meat Filling

  • 12 ounces ground turkey

Cheese Filling

  • 3/4 cup ricotta cheese
  • 1 cup shredded mozzarella cheese

Optional

  • 8 cherry tomatoes

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the peppers.
  2. Prepare Peppers and Cook Turkey: Place the halved and seeded peppers cut side up in a baking dish. Sprinkle each with 1/4 teaspoon of garlic salt. Evenly distribute the ground turkey between the pepper halves, pressing it gently into the bottom of each. Sprinkle another 1/4 teaspoon of garlic salt over the turkey. Bake the peppers for 30 minutes to allow the turkey to cook partially and the peppers to soften.
  3. Add Cheese and Tomatoes: Remove the peppers from the oven and evenly dollop the ricotta cheese into each pepper. Sprinkle the remaining 1/2 teaspoon of garlic salt over the cheese, then top with shredded mozzarella. If using, place cherry tomatoes in the gaps between the peppers in the baking dish for added flavor and color.
  4. Final Bake: Return the dish to the oven and bake for an additional 30 minutes. This will ensure the peppers are fully softened, the turkey is thoroughly cooked, and the cheese on top is melted and golden brown.

Notes

  • Make sure to seed the peppers well to avoid any bitterness inside.
  • You can substitute ground turkey with ground chicken or lean ground beef if preferred.
  • For a spicier flavor, add red pepper flakes or diced jalapeños to the ground turkey before baking.
  • Cherry tomatoes are optional but add a juicy, slightly sweet contrast when baked around the peppers.
  • Allow the peppers to rest for a few minutes after baking for easier handling and improved flavor melding.
