Instructions

  1. Prepare the filling: In a large bowl, combine shredded chicken, softened cream cheese, diced sausage if using, green onions, shredded cheddar cheese, hot sauce, and Cajun seasoning. Mix thoroughly, adjusting hot sauce to your desired spice level.
  2. Assemble the egg rolls: Lay an egg roll wrapper on a flat surface with a corner facing you making a diamond shape. Place about 2 tablespoons of filling near the bottom corner. Fold the bottom corner over the filling, then fold the sides tightly inward. Roll up firmly toward the top corner, sealing the edge with beaten egg to secure.
  3. Heat the oil: Pour vegetable oil into a deep skillet or fryer about 2 inches deep and heat to 350°F (175°C). Ensure the oil is hot enough for frying.
