Perfect for a healthy snack or dessert, this recipe offers a delightful balance of natural sweetness, smooth texture, and a hint of sea salt, making it a satisfying and guilt-free indulgence for chocolate and banana lovers alike.

Ingredients

Scale

Fruit

  • 2 medium semi-ripe bananas

Spreads & Nuts

  • 1/2 cup + 2 tablespoons drippy, creamy peanut butter

Chocolate & Oils

  • 1.5 cups dark chocolate chips
  • 1 teaspoon coconut oil (optional)

Seasoning

  • Flaky sea salt (optional)

Instructions

  1. Prepare the Baking Sheet: Line a medium-sized baking sheet with parchment paper to prevent sticking and make removal of the bark easier.
  2. Slice the Bananas: Peel and slice the bananas into 1/3-inch thick slices. Slice on a slight angle for better fit, ensuring the pieces are uniform for even freezing.
  3. Arrange Banana Slices: Arrange the banana slices closely in a rectangular shape on the lined baking sheet so they touch each other, which helps the bark hold together once frozen.
  4. Spread Peanut Butter: Evenly spread the drippy, creamy peanut butter over the banana slices to completely cover them. If the peanut butter is too thick, warm it gently in the microwave for 10-15 seconds to soften. Freeze the peanut butter-covered bananas for 20 minutes to set.
  5. Melt Chocolate: Place the dark chocolate chips (and coconut oil if using) in a microwave-safe dish and heat in 30-second intervals until mostly melted. Stir thoroughly to achieve a smooth texture, being careful not to burn the chocolate.
  6. Cover with Chocolate: Remove the banana and peanut butter layer from the freezer. Pour and spread the melted chocolate evenly over the top. Optionally, sprinkle with flaky sea salt or additional toppings at this stage.
  7. Freeze to Set: Return the assembled bark to the freezer for at least 90 minutes, up to 2 hours, until the chocolate is fully set and firm.
  8. Serve: Once set, remove the bark from the freezer, flip it over, peel off the parchment paper, and break into large pieces. Serve immediately or store frozen.

Notes

  • Use semi-ripe bananas for the best balance of sweetness and firmness.
  • If peanut butter is too thick for spreading, warming it slightly helps create an even layer.
  • Add coconut oil to chocolate to create a smoother, shinier coating if desired.
  • Flaky sea salt enhances the flavor by balancing the sweetness of the chocolate and bananas.
  • Store leftover bark in an airtight container in the freezer to maintain freshness.
  • Feel free to add nuts, shredded coconut, or dried fruit as additional toppings before freezing.
