- 1 ½ cup (330 ml) Guinness
- 2 tablespoons fresh thyme, finely chopped
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 4 cups vegetable stock
- Salt and freshly ground black pepper to taste
- Prepare the Base Vegetables: Heat the olive oil in a heavy-bottomed pot and sauté the diced carrot and celery over medium heat for 4-5 minutes until they soften.
