Ingredients

Scale

Main Ingredients

  • 1 tablespoon olive oil
  • 1/2 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 pound lean ground turkey (preferably turkey thigh)
  • 1 small green bell pepper, chopped
  • 1 (14 fluid ounce) can diced tomatoes with juices
  • 1 (14 fluid ounce) can pumpkin puree
  • 1 (14 fluid ounce) can white (cannellini) beans, drained
  • 1 (14 fluid ounce) can red kidney beans, drained

Spices & Liquids

  • 2 tablespoons chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 cup chicken broth
  • Salt and pepper to taste

Garnish (Optional)

  • Mexican cheese blend
  • Cilantro
  • Sour cream or Greek yogurt
  • Avocado slices

Instructions

  1. Sauté onion: In a soup pot over medium-high heat, heat the olive oil and sauté the chopped onion for about 5 minutes until softened and translucent.
  2. Cook garlic and turkey: Add the minced garlic and ground turkey to the pot. Break up the turkey with a spoon and continue cooking for another 5 minutes until the meat is browned and cooked through.
  3. Prep other ingredients: While the onions and turkey cook, prepare the remaining ingredients such as chopping the bell pepper and opening the cans to save time.
  4. Add remaining ingredients and simmer: Stir in the chopped green bell pepper, diced tomatoes with juices, pumpkin puree, drained white beans, drained kidney beans, chili powder, smoked paprika, ground cumin, dried oregano, cayenne pepper (if using), chicken broth, salt, and pepper. Increase the heat to high and bring the mixture just to a boil. Then reduce the heat to low and let it simmer for 10 to 15 minutes, stirring occasionally to blend flavors and prevent sticking.
  5. Serve and garnish: Ladle the chili into bowls and serve as is or top with optional garnishes such as Mexican cheese blend, fresh cilantro, sour cream or Greek yogurt, and avocado slices.

Notes

  • For a spicier chili, increase the cayenne pepper or add a dash of hot sauce.
  • Using turkey thigh adds more flavor and moisture than lean breast meat.
  • Beans can be swapped or omitted as preferred for dietary needs.
  • Leftovers keep well refrigerated for up to 4 days or freeze for up to 3 months.
  • To make this recipe vegetarian, substitute the turkey with plant-based meat alternatives and use vegetable broth.
  • Adjust salt and spices to taste during cooking for best flavor balance.
