Ingredients

Scale

Salad Ingredients

  • 1/2 English cucumber, quartered lengthwise and sliced
  • 3 cups cherry tomatoes, halved
  • 8 oz fresh mozzarella pearls (or 1 cup diced fresh mozzarella)
  • 1 large avocado, diced
  • 1/3 cup fresh basil, chopped

Dressing Ingredients

  • 3 Tbsp extra virgin olive oil
  • 1 Tbsp balsamic vinegar
  • 1 garlic clove, minced or pressed
  • 1/2 tsp fine sea salt (plus more to taste)
  • 1/4 tsp freshly cracked black pepper

Instructions

  1. Prepare the Salad: In a large salad bowl, combine the quartered and sliced cucumber, halved cherry tomatoes, fresh mozzarella pearls, diced avocado, and chopped fresh basil. Toss gently to mix the ingredients evenly.
  2. Make the Dressing: In a separate small bowl, whisk together the extra virgin olive oil, balsamic vinegar, minced or pressed garlic, fine sea salt, and freshly cracked black pepper until well combined and emulsified.
  3. Dress and Serve: Just before serving, drizzle the dressing over the prepared salad. Toss gently to ensure all ingredients are coated with the dressing. Serve immediately to enjoy the fresh flavors and textures.

Notes

  • Use ripe but firm avocados to avoid mushiness in the salad.
  • Fresh mozzarella pearls can be substituted with diced mozzarella if preferred.
  • Adjust the salt and pepper in the dressing to taste before tossing the salad.
  • For added crunch, consider adding toasted pine nuts or walnuts.
  • Serve chilled or at room temperature for optimal flavor.
