Ingredients

Scale

Dressing

  • 1/4 cup peanut butter
  • 1/4 cup low-sodium soy sauce
  • 2 Tbsp brown sugar or honey
  • 2 Tbsp rice wine vinegar
  • 1/2 Tbsp minced garlic
  • 1/2 Tbsp minced ginger
  • 1 tsp sriracha sauce
  • 12 Tbsp water (optional)

Wrap Filling

  • 2 chicken breasts, cooked and chopped
  • 3 cups coleslaw mix
  • 1/2 cup grated carrot (optional)
  • 1/4 cup chopped cilantro
  • 1/4 cup roasted, salted peanuts
  • 46 tortillas

Instructions

  1. Prepare Dressing: In a small bowl or liquid measuring cup, whisk together peanut butter, low-sodium soy sauce, brown sugar (or honey), rice wine vinegar, minced garlic, minced ginger, and sriracha sauce until smooth. If the dressing is too thick, add 1-2 tablespoons of water to thin it out to your desired consistency.
  2. Combine Wrap Filling: In a large bowl, combine the cooked, chopped chicken breasts, coleslaw mix, grated carrot, chopped cilantro, and roasted peanuts. Pour the prepared peanut dressing over the mixture and toss thoroughly to coat all ingredients evenly. Allow the mixture to sit for a few minutes so the flavors meld together.
  3. Warm Tortillas: Heat the tortillas in the microwave for about 30 seconds. This softens them and makes rolling easier without cracking the wraps.
  4. Assemble Wraps: Evenly distribute the chicken and vegetable filling onto each warmed tortilla. Roll the tortillas tightly to form wraps. Serve immediately for the best flavor and texture.

Notes

  • For a gluten-free option, use gluten-free soy sauce or tamari and gluten-free tortillas.
  • Add extra heat by increasing the amount of sriracha or including sliced fresh chili peppers.
  • You can substitute chicken breasts with grilled tofu or shrimp for variation.
  • If you prefer a creamier dressing, add a splash of coconut milk or Greek yogurt.
  • These wraps are best enjoyed fresh but can be stored wrapped tightly in the refrigerator for up to one day.
