Ingredients

Scale

Potatoes

  • 4 large russet potatoes
  • 1 tbsp olive oil
  • Salt and pepper to taste

Ground Beef Filling

  • 1 lb ground beef
  • 1 packet taco seasoning
  • Water as required by taco seasoning packet

Toppings

  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat Oven: Preheat the oven to 400°F (200°C) to ensure it’s ready for baking the potatoes.
  2. Prepare Potatoes: Scrub the russet potatoes thoroughly and dry them with a towel. Pierce each potato several times with a fork to allow steam to escape while baking.
  3. Season and Bake Potatoes: Rub each potato with olive oil and sprinkle with salt and pepper. Place them on a baking sheet and bake for 45 minutes or until the potatoes are tender when pierced with a fork.
  4. Cook Ground Beef: While the potatoes bake, heat a skillet over medium heat and cook the ground beef until browned, breaking it apart as it cooks. Drain any excess fat.
  5. Add Taco Seasoning: Stir in the taco seasoning and the amount of water specified on the seasoning packet. Simmer the mixture for 5 minutes, allowing the flavors to meld, then remove from heat.
  6. Prepare Potatoes for Filling: Once baked, let the potatoes cool slightly to handle safely. Cut a slit along the top of each potato and gently squeeze the sides to open them up for filling.
  7. Fill Potatoes: Spoon the seasoned ground beef mixture into each potato until well filled, then sprinkle shredded cheddar cheese over the top.
  8. Melt Cheese: Return the stuffed potatoes to the oven for 5 minutes or until the cheese has melted to a gooey, delicious finish.
  9. Add Toppings: Remove the potatoes from the oven and top with dollops of sour cream, then sprinkle with chopped green onions, diced tomatoes, sliced black olives, and chopped cilantro for fresh flavor and color.
  10. Serve: Serve the taco potatoes immediately while warm and bubbly for a fun and hearty meal.

Notes

  • Russet potatoes are preferred for their fluffy interior when baked.
  • You can customize toppings according to taste, such as adding jalapeños or salsa.
  • For a lighter version, use lean ground beef or substitute with ground turkey.
  • To save time, potatoes can be microwaved until soft before baking to reduce total cooking time.
  • Leftovers can be refrigerated for up to 3 days, reheat thoroughly before serving.
