This Super Easy Chicken Noodle Casserole is a comforting, creamy dish packed with tender chicken, cheesy goodness, and vegetables, all topped with a golden, crispy panko breadcrumb crust. Perfect for a quick family dinner, it combines convenience with homemade flavor using pantry staples and rotisserie chicken.

Ingredients

Scale

Main Ingredients

  • 2 cans chunk chicken breast, drained (12.5 ounces each, or about 3 cups diced rotisserie chicken)
  • 2 cans cream of chicken soup (10.5 ounces each)
  • 1 cup mayonnaise
  • 1 cup milk
  • 1/2 finely diced onion (optional) or 1 tablespoon dried onion flakes
  • 2 cups shredded cheddar cheese
  • 1 1/2 cups frozen peas and carrots
  • 1 package egg noodles, cooked and drained (12 ounces)

Topping

  • 1 cup panko breadcrumbs
  • 1/2 cup melted salted butter (1 stick)

Instructions

  1. Preheat and Prepare Baking Dish: Preheat your oven to 350°F (175°C). While the oven is heating up, spray a 9×13-inch baking dish with non-stick cooking spray to prevent the casserole from sticking to the dish.
  2. Combine Ingredients: In a large bowl, combine the drained chunk chicken breast, cream of chicken soup, mayonnaise, milk, finely diced onion (or onion flakes), shredded cheddar cheese, and frozen peas and carrots. Stir until all ingredients are well combined.
  3. Add and Mix Noodles: Gently fold in the cooked and drained egg noodles into the mixture, ensuring the noodles are evenly coated throughout the creamy chicken mixture.
  4. Transfer to Baking Dish and Add Topping: Pour the combined mixture into the prepared baking dish and spread evenly. Sprinkle the panko breadcrumbs evenly over the top, then drizzle the melted salted butter over the breadcrumbs to create a crispy, golden crust during baking.
  5. Bake and Serve: Bake the casserole uncovered in the preheated oven for 30-35 minutes, or until the casserole is bubbly and the topping is golden brown. Remove from oven and let cool slightly before serving.

Notes

  • You can substitute rotisserie chicken for canned chicken for a fresher texture and flavor.
  • If you prefer, use dried onion flakes instead of fresh onion for convenience.
  • Feel free to swap frozen mixed vegetables based on your preference or what you have available.
  • For a gluten-free version, use gluten-free noodles and breadcrumbs.
  • Let the casserole rest for 5-10 minutes after baking to set before serving.
