Ingredients

Scale

Steak and Peppers

  • 1 lb. steak (such as sirloin or tenderloin), cut into bite-sized pieces
  • 1 bell pepper (red or yellow), sliced
  • 1 bell pepper (green), sliced
  • 2 tablespoons olive oil
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Sweet Potatoes

  • 2 medium sweet potatoes, diced
  • 1 tablespoon olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste

Instructions

  1. Preheat the Oven: Preheat your oven to 425°F (220°C) to ensure the sweet potatoes roast evenly and become tender and golden.
  2. Prepare the Sweet Potatoes: In a large bowl, toss the diced sweet potatoes with 1 tablespoon of olive oil, garlic powder, smoked paprika, salt, and pepper until they are evenly coated with the seasonings.
  3. Roast the Sweet Potatoes: Spread the seasoned sweet potatoes in a single layer on a baking sheet. Roast them in the preheated oven for about 20 minutes, or until they are tender and have a golden-brown color.
  4. Cook the Steak Bites: While the sweet potatoes are roasting, heat the remaining 2 tablespoons of olive oil in a large skillet over medium-high heat to get a nice sear on the steak.
  5. Season the Steak: Season the steak pieces with onion powder, salt, and pepper evenly before adding them to the skillet for cooking.
  6. Sear the Steak: Add the seasoned steak bites to the hot skillet and cook for 3-4 minutes, turning occasionally, until browned and cooked to your preferred doneness (medium-rare to medium recommended).
  7. Add Peppers: Once the steak is almost cooked through, add the sliced bell peppers to the skillet. Sauté them together for an additional 2-3 minutes until the peppers are tender but still crisp.
  8. Combine with Sweet Potatoes: Remove the roasted sweet potatoes from the oven and add them to the skillet with the steak and peppers. Stir everything together gently to blend the flavors.
  9. Garnish: Take the skillet off the heat, drizzle with extra olive oil if desired, and sprinkle with freshly chopped parsley for a fresh finish.
  10. Serve: Plate the steak bites, sweet potatoes, and peppers mixture immediately while warm to enjoy a robust and colorful meal.

Notes

  • For best results, choose a tender cut of steak such as sirloin or tenderloin.
  • Adjust the seasoning amounts according to your taste preferences.
  • You can swap bell peppers with any other favorite vegetables if desired.
  • Make sure not to overcrowd the skillet when searing steak to ensure a good crust.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
