A warming and nutritious Spiced Carrot and Lentil Soup that combines the sweetness of carrots with the earthiness of red lentils and fragrant Indian-inspired spices. This easy-to-make vegan soup is perfect for a comforting lunch or dinner and pairs wonderfully with homemade soda bread.

  • 1 tablespoon olive oil
  • 2 onions, diced
  • 2 cloves garlic, grated or crushed
  • ½ teaspoon dried chilli flakes (adjust to taste)
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon garam masala
  • 500 g carrot, chopped into roughly 1cm cubes
  • 100 g red lentils
  • 800 ml vegetable stock (cubed stock like Kallo Organic Vegetable Stock is suitable)
  • Salt and black pepper to taste

Instructions

  1. Sauté Onions: Heat the olive oil in a large saucepan over medium heat. Add the diced onions and cover with a lid. Gently fry for about 5 minutes, stirring occasionally, until the onions soften but do not brown.
  2. Add Garlic and Spices: Stir in the grated garlic, dried chilli flakes, turmeric, cumin, and garam masala. Cook for an additional minute, stirring frequently to avoid burning. If the mixture dries out, add a splash of water to prevent sticking.
  3. Add Vegetables and Lentils: Add the chopped carrots, red lentils, and vegetable stock to the pan. Season with salt and black pepper to taste. Increase the heat to bring the mixture to a boil.
  4. Simmer: Once boiling, reduce the heat to low and cover the pan with a lid. Let the soup simmer gently for 20-25 minutes, or until the carrots are tender and the lentils have softened completely.
  5. Blend: Carefully transfer the hot soup in batches to a blender and blend until completely smooth. Be cautious handling hot liquids to avoid burns.
  6. Reheat and Adjust Seasoning: Return the blended soup to the saucepan if necessary and warm it through to your preferred serving temperature. Taste and adjust the seasoning as desired.
  7. Serve: Ladle the soup into bowls and serve warm with homemade soda bread for a perfect meal.

  • Note 1: Cutting carrots into roughly 1 cm cubes ensures even cooking and a smooth blend later.
