Scale

Main Ingredients

  • 1 lb breakfast sausage, cooked and crumbled
  • 8 large eggs
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • 1 can (4 oz) diced green chilies, drained
  • 1/2 cup chopped onion
  • 1 cup chopped bell peppers (red or green)
  • 2 cups frozen hash brown potatoes, thawed
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C) to ensure it’s ready for baking the casserole.
  2. Prepare the sausage: Cook the breakfast sausage in a skillet over medium heat until browned and fully cooked. Drain excess grease and set aside.
  3. Mix eggs and seasoning: In a large mixing bowl, whisk together the eggs, milk, salt, pepper, chili powder, and cumin until fully combined.
  4. Combine ingredients: Add the cooked sausage, shredded cheddar cheese, diced green chilies, chopped onions, bell peppers, and thawed hash browns to the egg mixture. Stir gently to combine everything evenly.
  5. Transfer to baking dish: Grease a 9×13 inch baking dish and pour the mixture evenly into the dish.
  6. Bake the casserole: Place the baking dish in the preheated oven and bake for 45-50 minutes, or until the eggs are fully set and the top is lightly browned.
  7. Cool and serve: Remove from the oven and let the casserole cool for about 5 minutes before slicing and serving.

Notes

  • Use any type of breakfast sausage you prefer, including turkey or vegetarian sausage for different dietary needs.
  • Feel free to add jalapeños for extra heat.
  • Leftovers can be refrigerated for up to 3 days and reheated in the microwave or oven.
  • For a lower-fat version, reduce the amount of cheese or use a low-fat cheese alternative.
