Beef and Seasoning
- 2 1/2 lb. flat cut corned beef brisket
- 1 seasoning packet (from corned beef roast)
- 12 oz. Guinness Beer (bottled extra stout)
- 1/4 cup brown sugar
- 1 bay leaf
Vegetables
- 8 Yukon gold potatoes
- 4 carrots
- 2 garlic cloves
- 1/2 head cabbage, cut into slices
- Prepare the Corned Beef: Rinse the corned beef brisket under cold water and pat it dry with paper towels. This step removes excess saltiness from the brine.
- Add Ingredients to Slow Cooker: Place the dried corned beef into the slow cooker. Sprinkle the seasoning packet evenly over the meat, then sprinkle brown sugar on top. Add the potatoes, carrots, garlic cloves, and bay leaf on top of the corned beef. Pour the Guinness beer over all the ingredients.
- Slow Cook the Beef and Vegetables: Cover the slow cooker with the lid and set it to cook on low for 8 hours. About 6 hours into cooking, add the sliced cabbage to the slow cooker and continue cooking for the remaining 2 hours. This ensures the cabbage is tender but not overcooked. Alternatively, you can add cabbage at the start or during the last 30 minutes according to your preference.
