Instructions

  1. Cook Sausage: In a skillet over medium heat, cook the breakfast sausage until browned and crumbly. Drain excess fat and set the sausage aside.
  2. Prepare Eggs: In a bowl, whisk together eggs, milk, salt, and black pepper. Scramble the egg mixture in a skillet over medium heat until they are just set but still moist. Stir in half of the shredded cheddar cheese to melt into the eggs.
  3. Assemble Tortillas: Lay out each flour tortilla and evenly fill them with the scrambled eggs and cooked sausage mixture. Roll up each tortilla and place them seam-side down in a greased baking dish.
  4. Make Sauce: In a separate bowl, combine the cream of mushroom or cream of chicken soup with sour cream, garlic powder, and onion powder. Mix thoroughly to form a creamy sauce.
  5. Top Enchiladas: Pour the creamy sauce evenly over the filled tortillas in the baking dish. Sprinkle the remaining shredded cheddar cheese on top.
