A hearty and flavorful Pizza Soup featuring Italian sausage, pepperoni, crushed tomatoes, and melted mozzarella cheese, reminiscent of classic pizza flavors in a comforting, easy-to-make soup.

Ingredients

Scale

Meat and Cheese

  • 1 pound Italian sausage (casings removed)
  • 4 oz pepperoni (quartered)
  • 4 oz mozzarella cheese (grated)

Vegetables and Aromatics

  • 1 medium onion (diced)
  • 1 medium green bell pepper (diced)
  • 2 garlic cloves (finely diced)
  • 68 fresh basil leaves (shredded)

Liquids and Canned Goods

  • 1 can (14 oz / 400g) crushed tomatoes
  • 1 cup tomato sauce
  • 4 cups chicken stock

Seasonings

  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried marjoram
  • 1 teaspoon sugar
  • Salt and freshly ground black pepper to taste

Instructions

  1. Brown the sausage: Heat the olive oil in a large pot over medium heat. Add the Italian sausage, breaking it up with a spoon, and cook until browned and fully cooked.
  2. Sauté vegetables: Add the diced onion and green bell pepper to the pot with the sausage and sauté for a few minutes until the vegetables soften and become translucent.
  3. Add garlic and herbs: Stir in the finely diced garlic, dried oregano, dried basil, and dried marjoram. Cook for another minute until fragrant to release the flavors.
  4. Add tomatoes and liquids: Pour in the crushed tomatoes, tomato sauce, sugar, quartered pepperoni, and chicken stock. Stir well to combine all ingredients, then bring the mixture to a boil.
  5. Simmer the soup: Once boiling, reduce the heat to low and let the soup simmer uncovered for 10 minutes to meld the flavors and slightly thicken the broth.
  6. Finish with fresh basil and seasoning: Stir in the shredded fresh basil leaves. Taste the soup and adjust the seasoning with salt and freshly ground black pepper as needed.
  7. Serve with melted mozzarella: Ladle the hot soup into bowls. Top each serving with grated mozzarella cheese while the soup is hot, allowing the cheese to melt for a couple of minutes before serving.

Notes

  • For a spicier soup, consider adding red pepper flakes when cooking the garlic and herbs.
  • You can substitute turkey sausage for a leaner option.
  • Using fresh tomatoes instead of canned can be done, but adjust cooking time accordingly to soften them.
  • Serve with crusty bread or garlic breadsticks to complete the meal.
  • The soup can be refrigerated for 3-4 days and reheated gently on the stovetop.
