Meat and Cheese
- 1 pound Italian sausage (casings removed)
- 4 oz pepperoni (quartered)
- 4 oz mozzarella cheese (grated)

- 4 cups chicken stock
Seasonings
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried marjoram
- 1 teaspoon sugar
- Salt and freshly ground black pepper to taste
- Brown the sausage: Heat the olive oil in a large pot over medium heat. Add the Italian sausage, breaking it up with a spoon, and cook until browned and fully cooked.
- Sauté vegetables: Add the diced onion and green bell pepper to the pot with the sausage and sauté for a few minutes until the vegetables soften and become translucent.
- Add garlic and herbs: Stir in the finely diced garlic, dried oregano, dried basil, and dried marjoram. Cook for another minute until fragrant to release the flavors.
- Add tomatoes and liquids: Pour in the crushed tomatoes, tomato sauce, sugar, quartered pepperoni, and chicken stock. Stir well to combine all ingredients, then bring the mixture to a boil.
- Simmer the soup: Once boiling, reduce the heat to low and let the soup simmer uncovered for 10 minutes to meld the flavors and slightly thicken the broth.
- Finish with fresh basil and seasoning: Stir in the shredded fresh basil leaves. Taste the soup and adjust the seasoning with salt and freshly ground black pepper as needed.
- Serve with melted mozzarella: Ladle the hot soup into bowls. Top each serving with grated mozzarella cheese while the soup is hot, allowing the cheese to melt for a couple of minutes before serving.
