  • 3/4 tsp Smoked Paprika
  • 1/2 tsp Dried Oregano
  • 1/2 tsp Black Pepper
  • 1/41/2 tsp Chilli Flakes
  • 1/4 tsp Dried Thyme

Vegetables & Aromatics

  • 1 medium White Onion, finely diced
  • 3 cloves Garlic, finely diced

Meat

  • 500g Minced/Ground Beef

Liquids & Sauces

  • 2 tbsp Tomato Puree
  • 600ml Beef Stock
  • 500g Tomato Passata
  • 180ml Double/Heavy Cream
  • 1 tsp Worcestershire Sauce
  • Olive Oil, as needed

Pasta

  • 300g uncooked Conchiglie Pasta

Garnish

  • Finely diced Fresh Parsley, to serve

Instructions

  1. Season and Sear Beef: In a large pot over medium-high heat, combine salt, smoked paprika, dried oregano, black pepper, chili flakes, and dried thyme to create the seasoning mix. Add a splash of olive oil, then add the minced beef, seasoning it well with the spice mix. Sear the beef until browned, breaking it apart with a spoon, about 5-7 minutes. Drain excess fat if necessary.
  2. Cook Onions and Garlic: Add the finely diced onion and garlic to the pot with the browned beef. Stir in 2 tablespoons of tomato puree. Cook, stirring frequently, until onions are softened and fragrant, about 4-5 minutes.
  3. Add Liquid and Pasta: Pour in 600ml of beef stock, 500g of tomato passata, 180ml of double cream, and 1 teaspoon of Worcestershire sauce. Stir well to combine everything. Add the uncooked conchiglie pasta to the pot, making sure the pasta is submerged in the liquid.
  4. Simmer: Reduce heat to medium-low, cover the pot with a lid slightly ajar, and let everything simmer gently. Stir occasionally to prevent sticking. Cook until the pasta is tender and the sauce has thickened to a creamy consistency, approximately 15-20 minutes.
  5. Serve: Once the pasta is cooked through and the sauce is rich and creamy, remove from heat. Garnish generously with finely diced fresh parsley. Serve hot and enjoy your comforting one pot creamy beef pasta meal.

Notes

  • Adjust chili flakes to taste depending on preferred spice level.
  • Using conchiglie pasta captures the sauce well, but penne or rigatoni can be good substitutes.
  • For a lighter version, swap double cream with half-and-half or whole milk, but sauce will be less rich.
  • Make sure to stir occasionally while simmering to prevent pasta from sticking to the bottom.
  • Leftovers store well refrigerated for up to 3 days; reheat gently with a splash of water or stock.
  • Gluten-free pasta can be used to make this recipe gluten-free.
