Vegetables
- 2 sticks celery, chopped finely
- 2 medium carrots, peeled & chopped finely
- 1/2 medium onion, chopped
- 3 cloves garlic, minced

- Sauté Vegetables: In a large soup pot, heat the butter and olive oil over medium-high heat. Add the finely chopped celery, carrots, and onion. Cook for 5-7 minutes until the vegetables are softened.
- Add Garlic and Flour: Stir in the minced garlic and cook for about 30 seconds. Then sprinkle in the flour and cook for another minute, stirring constantly to cook out the raw flour taste.
- Add Broth and Chicken: Pour in the chicken broth while stirring until the flour dissolves completely. Add the Italian seasoning and the uncooked chicken breasts. Bring the soup to a boil.
- Simmer Soup: Cover the pot with the lid slightly open, reduce the heat, and simmer for 15 minutes to cook the chicken through.
- Cook Orzo: Stir in the orzo and cook uncovered for another 10 minutes, stirring frequently to prevent sticking, until the orzo is tender.
- Shred Chicken and Season: Remove the chicken breasts from the pot, cut them into bite-sized pieces or shred them, then return to the soup. Stir in the lemon juice and chopped parsley. Adjust salt and pepper to taste. Serve the soup hot immediately.

- You can adjust the amount of lemon juice according to your taste preference for more or less tanginess.
- For a richer soup, you can use chicken thighs instead of breasts.
- Keep stirring the orzo often while cooking to prevent it from sticking to the bottom of the pot.
