Instructions

  1. Preheat and prepare for roasting: Heat your oven to 350ºF (177ºC) and line a baking sheet with parchment paper to prevent sticking and make cleanup easy.
  2. Roast the hazelnuts: Spread the hazelnuts in a single layer on the baking sheet and roast for about 10 minutes until they become fragrant and lightly browned. This enhances their flavor and helps loosen the skins.
  3. Remove hazelnut skins: Place the warm hazelnuts in a clean kitchen towel. Gently rub them together inside the towel until most of the skins come off, which improves the smoothness and flavor of the final spread.
  4. Blend the hazelnuts: Add the peeled hazelnuts to a food processor and blend until smooth and creamy. This can take 5 to 10 minutes; pause occasionally to scrape down the sides to ensure an even texture.
  5. Add remaining ingredients: Add the powdered sweetener, unsweetened cocoa powder, melted coconut oil, and vanilla extract to the blended hazelnuts. Blend again until fully smooth and combined. If the mixture seems too thick, add a little more melted coconut oil to loosen it to your preferred consistency.
  6. Store the Nutella: Transfer your homemade sugar-free Nutella to a clean jar. Seal and store it in the refrigerator for up to one month. Stir before each use if separation occurs.
