Instructions

  2. Sear Shrimp: Heat olive oil in a large skillet over medium-high heat. Season the peeled and deveined shrimp with salt and pepper. Sear the shrimp for 1–2 minutes per side until they turn just pink and are partially cooked. Remove the shrimp from the skillet and set aside to keep warm.
  3. Sauté Aromatics: In the same skillet, melt the butter over medium heat. Add the finely chopped onion and sauté for 3–4 minutes until softened and translucent. Stir in the minced garlic, chopped basil, and ground nutmeg, cooking for about 30 seconds until fragrant.
  4. Make Cream Sauce: Pour in the heavy whipping cream and bring to a gentle simmer. Allow the mixture to simmer for 3–4 minutes until it thickens slightly. Stir in half of the grated parmesan cheese (1/2 cup) and all of the shredded monterey jack cheese. Mix the sauce thoroughly until smooth and creamy. Season with salt and pepper to taste.
  5. Assemble Dish: Arrange the seared shrimp in an even layer inside the prepared baking dish. Pour the creamy cheese sauce evenly over the shrimp to cover them completely.
  6. Add Topping: In a small bowl, combine the remaining 1/2 cup parmesan cheese with the crushed pork rind crumbs. Sprinkle this mixture evenly over the top of the assembled shrimp and sauce to create a crunchy, golden crust when baked.
