  • 6 medium garlic cloves, finely chopped
  • 6 scallions, white and green parts separated, thinly sliced

Instructions

  1. Cook the Noodles: Bring a large pot of salted water to a boil. Add the noodles and cook according to the package instructions until al dente. Drain the noodles and rinse them under cold water until cool to stop the cooking process and prevent sticking.
  2. Prepare the Sauce: In a small bowl, combine hoisin sauce, soy sauce, toasted sesame oil, and maple syrup or honey. Stir well and set aside.
  3. Sauté Aromatics: Heat a large 12-inch skillet over medium-high heat for about 2 minutes. Add 1 to 2 tablespoons of vegetable oil, then add the finely chopped garlic and the white parts of the scallions. Stir continuously and cook until fragrant, about 30 seconds, being careful not to burn the garlic.
  4. Toss Noodles with Sauce: Immediately add the prepared hoisin sauce mixture to the skillet, followed by the cooked noodles. Toss everything thoroughly to coat the noodles evenly with the sauce.
  5. Develop Crispy Texture: Let the noodles cook undisturbed in the skillet for 2 to 3 minutes until they start to stick to the pan and develop a crispy bottom layer. Taste the noodles and season with salt and pepper as needed.
  6. Garnish and Serve: Transfer the noodles to serving bowls and sprinkle with toasted white sesame seeds and the green parts of the scallions for freshness and crunch. Serve warm.
