Ingredients

Scale

Steak and Vegetables

  • 1 pound steak (flank, ribeye, or sirloin)
  • 2 medium zucchinis, sliced into thick rounds
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Creamy Herb Sauce

  • 1/2 cup sour cream or Greek yogurt
  • 1 tablespoon Dijon mustard
  • 2 tablespoons fresh herbs (chives or parsley), chopped
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Base

  • 2 cups cooked rice or mashed potatoes

Instructions

  1. Season the Steak: Pat the steak dry using paper towels. Season both sides evenly with garlic powder, onion powder, salt, and black pepper. Allow the steak to rest at room temperature for 15–20 minutes to let the flavors absorb and ensure even cooking.
  2. Prepare the Creamy Herb Sauce: In a bowl, whisk together sour cream or Greek yogurt, Dijon mustard, chopped fresh herbs, garlic powder, salt, and pepper. Mix until smooth and well combined. Cover and refrigerate the sauce until ready to serve to enhance the flavors.
  3. Grill the Zucchini: Toss zucchini slices in olive oil, salt, and pepper until well coated. Heat a grill pan or outdoor grill to medium-high heat. Grill zucchini slices for about 2–3 minutes per side or until tender with slight char marks. Remove from heat and set aside.
  4. Cook the Steak: Heat a grill pan or skillet over medium-high heat and add a small amount of oil. Cook the steak for 3–4 minutes on each side for medium-rare, adjusting time for your preferred doneness. Once cooked, let the steak rest for 5–10 minutes to redistribute juices before slicing thinly against the grain.
  5. Assemble the Bowl: Begin by placing a serving of cooked rice or mashed potatoes in each bowl. Arrange the grilled zucchini on top, followed by the sliced steak. Drizzle generously with the creamy herb sauce and garnish with additional chopped fresh herbs for freshness and color. Serve immediately.

Notes

  • For different steak doneness levels, adjust cooking time accordingly.
  • Sour cream can be substituted with Greek yogurt for a tangier, lighter sauce.
  • Use fresh seasonal herbs like basil or cilantro if preferred.
  • Rice or mashed potatoes can be seasoned or flavored with butter or herbs to enhance the base layer.
  • Ensure steak rests after cooking to keep it juicy.
