  • 1/2 to 3/4 pound leftover sliced asado (see recipe), ham, or turkey

  • 4 slices queso de bola (or Edam cheese)

Instructions

  1. Toast the Rolls: Heat a large cast-iron pan over medium heat. Slice the pan de sal rolls in half and generously spread mayonnaise on the cut sides. Place the rolls cut side down on the hot pan and toast until golden brown for about 2 to 3 minutes. Toast in batches if needed. Remove and set aside.
  2. Prepare the Meat: In a small saucepan over medium-low heat, reheat the asado with enough sauce to bring it to a simmer. Alternatively, if using ham or turkey, heat 1 tablespoon butter in a pan and cook the meat slices until browned on both sides, about 2 minutes per side. Cook in batches if necessary, adding more butter as needed.
  3. Fry the Eggs: While heating the meat, heat a large nonstick pan over medium-low heat and add 1 tablespoon butter. Crack the eggs into the pan and cook until the whites are fully set but yolks remain runny or to your preference. Season the eggs with kosher salt.
  4. Assemble the Sandwiches: Place the warmed meat on the bottom half of each toasted roll. Top each with a slice of queso de bola, a fried egg, and then cover with the top half of the roll. Repeat for remaining sandwiches.
  5. Serve: Serve the freshly assembled Filipino-style breakfast sandwiches warm for a delicious and hearty start to the day.
