Ingredients

Scale

Base Ingredients

  • 1/2 cup melted butter
  • 2 cups milk
  • 2 cups flour
  • 1 cup white sugar
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon

Fruit and Nuts

  • 4 very ripe bananas, sliced
  • 1 cup chopped walnuts

Cream Cheese Topping

  • 8 ounces cream cheese
  • 1 large egg
  • 2 tablespoons brown sugar
  • 1 teaspoon vanilla extract
  • 1 cup packed light brown sugar

Instructions

  1. Preheat And Prepare: Preheat your oven to 400°F (200°C). Grease a 9×13-inch baking dish thoroughly with baking spray to prevent sticking.
  2. Add Butter: Pour the melted butter evenly into the bottom of the prepared baking dish, ensuring full coverage.
  3. Mix Dry Ingredients: In a large mixing bowl, whisk together the milk, flour, white sugar, baking powder, salt, and cinnamon until smooth and well combined to form the batter.
  4. Assemble Batter and Toppings: Carefully pour the batter over the melted butter in the baking dish without stirring. Then, evenly distribute the sliced bananas and chopped walnuts over the top of the batter.
  5. Prepare Cream Cheese Mixture: Warm the cream cheese in a microwave-safe bowl until soft and easily stirrable. Mix in the egg, 2 tablespoons of brown sugar, and vanilla extract until the mixture is smooth.
  6. Add Cream Cheese Dollops: Spoon the cream cheese mixture in small pockets scattered over the batter to create creamy pockets throughout the cobbler.
  7. Bake: Place the baking dish in the preheated oven and bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Notes

  • Ensure bananas are very ripe for maximum flavor and sweetness.
  • Do not stir the batter after pouring over butter, as the butter will soak into the batter during baking creating a tender crust.
  • Chilling the cream cheese slightly before mixing can make it easier to incorporate with the other ingredients.
  • Use a toothpick test to check doneness to avoid overbaking.
  • Walnuts can be toasted beforehand to enhance their flavor and crunch.
