Ingredients

Scale

Cheese Sauce

  • 2 tablespoons Unsalted Butter
  • 4 ounces Cream Cheese (or dairy-free cream cheese)
  • 1/4 cup Heavy Whipping Cream (or coconut cream)
  • 1 cup Shredded Sharp Cheddar Cheese

Beef Mixture

  • 1 pound Ground Beef (or ground chicken/turkey)
  • 2 tablespoons Taco Seasoning (homemade or low-sodium)

Crunchwrap Assembly

  • 4 pieces Low-Carb Tortillas (e.g., Mission Carb Balance or almond flour tortillas)
  • 1 cup Sour Cream (or Greek yogurt)
  • 1 cup Shredded Lettuce (iceberg or romaine)
  • 1 medium Tomato (can substitute with bell peppers or omit)
  • 1 cup Extra Cheddar Cheese (or pepper jack for spice)
  • 1/4 cup Cilantro (or parsley)
  • 1/2 cup Jalapeño Slices (optional)
  • 1 tablespoon Olive Oil (or any cooking oil)

Instructions

  1. Cheese Sauce Preparation: Melt 2 tablespoons of butter in a saucepan over medium heat. Add 4 ounces of cream cheese and 1/4 cup of heavy whipping cream, whisking continuously until the mixture is smooth. Stir in 1 cup of shredded sharp cheddar cheese until fully melted and incorporated to create a creamy cheese sauce.
  2. Beef Cooking: Heat a skillet over medium-high heat and add 1 pound of ground beef. Break apart the meat and cook for 5-7 minutes until browned thoroughly. Drain any excess fat, then stir in 2 tablespoons of taco seasoning evenly throughout the meat mixture.
  3. Tortillas Crisping: In another skillet, heat 1 tablespoon of olive oil over medium heat. Fry each low-carb tortilla individually for 1-2 minutes on each side until they turn golden and crispy. Remove and place on paper towels to drain any excess oil.
  4. Crunchwrap Assembly: Lay a large crispy tortilla flat on a clean surface. Spread the seasoned beef mixture evenly in the center, then pour warm cheese sauce over the beef. Place a smaller tortilla on top of the cheese sauce, followed by dollops of sour cream, shredded lettuce, diced tomatoes, and extra cheddar cheese.
  5. Crunchwrap Cooking: Fold the edges of the large tortilla over the filling, folding seam-side down to enclose the filling tightly. Heat the skillet again with olive oil and carefully place the folded Crunchwrap seam-side down. Cook for 3-4 minutes on each side until the tortilla is golden brown and heated through.
  6. Serving: Remove the Crunchwraps from the skillet and let them rest for one minute to set. Cut each Crunchwrap in half and serve warm topped with fresh cilantro and optional jalapeño slices for added spice.

Notes

  • Use dairy-free cream cheese and coconut cream to make the recipe dairy-free and keto-friendly.
  • Substitute ground chicken or turkey for a leaner protein option.
  • Choose low-carb tortillas specifically branded for keto or make your own almond flour tortillas.
  • Adjust the jalapeño slices according to your preferred spice level.
  • For a lighter version, use Greek yogurt instead of sour cream.
