Instructions

  1. Prepare the oil and avocados: In a deep skillet, heat about 1 inch of vegetable oil to 350°F (175°C). Slice each avocado in half lengthwise, remove the pits, and then cut each half into wedges.
  2. Prepare the breading stations: In a shallow dish, beat the 3 eggs. Place the flour in another shallow dish. In a third shallow dish, combine the panko breadcrumbs, Italian seasoning, garlic powder, and salt.
  3. Coat the avocado wedges: Dip each avocado wedge first into the flour, shaking off excess, then into the beaten eggs, and finally into the seasoned panko mixture, pressing gently to coat completely.
  4. Fry the avocado wedges: Carefully add 4-6 avocado wedges to the hot oil, frying for about 2 minutes until golden brown and crisp. Avoid overcrowding the pan to maintain oil temperature.
  5. Drain and serve: Remove the fried avocado wedges with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Serve warm with your preferred dipping sauce.
