Ingredients

Scale

Salmon

  • 4 salmon fillets (skin on or off, center cut)

Seafood Filling

  • 1/2 cup cooked crab meat (lump or claw)
  • 1/2 cup cooked shrimp, chopped
  • 4 oz cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped green onions
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Old Bay seasoning
  • 1 tablespoon fresh parsley, chopped
  • Salt and black pepper to taste

For Cooking

  • 1 tablespoon olive oil (for searing)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it’s ready for baking the stuffed salmon.
  2. Prepare Filling: In a mixing bowl, combine the crab meat, chopped shrimp, softened cream cheese, grated Parmesan cheese, chopped green onions, minced garlic, lemon juice, Dijon mustard, Old Bay seasoning, and chopped fresh parsley. Mix everything thoroughly until well incorporated.
  3. Cut Salmon Pockets: Using a sharp knife, carefully cut a horizontal slit in each salmon fillet to make a pocket, making sure not to cut all the way through.
  4. Season Salmon: Season both the inside and outside of each salmon fillet with salt and black pepper to enhance flavor.
  5. Stuff Salmon: Spoon the prepared seafood filling evenly into the pockets of each salmon fillet, ensuring they are well filled but not overstuffed.
  6. Sear Salmon: Heat olive oil in an oven-safe skillet over medium heat. Sear the stuffed salmon fillets for 2–3 minutes on each side until they develop a golden crust.
  7. Bake Salmon: Transfer the skillet with the seared salmon into the preheated oven. Bake for 12–15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  8. Garnish and Serve: Remove the salmon from the oven, garnish with additional fresh parsley and a wedge of lemon. Serve immediately for best flavor and texture.

Notes

  • You can use either lump or claw crab meat based on availability and preference.
  • If you prefer less richness, reduce the cream cheese by half and add a little Greek yogurt for creaminess.
  • To ensure even cooking, try to use salmon fillets of uniform thickness.
  • Oven-safe skillet is essential to go from stovetop searing to baking without transferring the fish.
  • Old Bay seasoning adds a distinctive savory and slightly spicy flavor; adjust to taste.
  • Salmon with skin on helps keep the fillet moist during cooking, but you may remove skin if preferred.
