Instructions

  1. Cook the Sausage & Aromatics: Heat a large pot or Dutch oven over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spoon. If excess grease accumulates, drain it. Add the diced onion and cook for 3–4 minutes until it becomes soft. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
  2. Simmer the Potatoes: Add the diced potatoes and chicken broth to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15 minutes or until the potatoes are fork-tender.
  3. Finish with Cream & Greens: Stir in the heavy cream and chopped kale or spinach. Allow the soup to simmer for an additional 5 minutes until the greens are wilted. Season the soup with salt, black pepper, and red pepper flakes if you desire some heat.
