Ingredients

Scale

Wet Ingredients

  • 1/2 cup unsalted butter (melted and slightly cooled)
  • 3 medium bananas (pureed)
  • 1/3 cup buttermilk
  • 1 large egg
  • 2 teaspoons vanilla extract

Dry Ingredients

  • 1 1/2 cups all-purpose flour
  • 3/4 cup brown sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon cinnamon

Cinnamon Swirl Mixture

  • 1/3 cup granulated sugar
  • 2 teaspoons cinnamon

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Spray a large loaf pan with non-stick baking spray or grease it well. If you don’t have a large loaf pan, use two smaller pans to ensure even baking.
  2. Prepare Wet Ingredients: In a large mixing bowl, puree the ripe bananas until smooth. Add the buttermilk, vanilla extract, egg, and melted butter to the banana puree. Mix thoroughly until the mixture is well combined and smooth.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, brown sugar, baking soda, baking powder, kosher salt, and cinnamon until evenly distributed.
  4. Mix Dry and Wet Ingredients: Gradually add the dry ingredient mixture into the wet ingredients, stirring gently until just combined. Be careful not to overmix to keep the bread tender.
  5. Prepare Cinnamon Swirl: In a small bowl, combine the granulated sugar and cinnamon to create the cinnamon swirl mixture.
  6. Assemble the Bread: Pour about three-quarters of the banana bread batter into the prepared loaf pan. Evenly sprinkle the cinnamon swirl mixture on top, spreading it toward the edges. Pour the remaining batter over the swirl layer, covering it completely. Optionally, sprinkle the reserved cinnamon sugar mixture on top for an extra crunchy, sweet crust.
  7. Bake: Bake the bread in the preheated oven for 45-50 minutes. If the top starts to brown excessively, tent the loaf with foil. Check doneness by inserting a toothpick into the center—if it comes out clean or with a few moist crumbs, it’s done.
  8. Cool the Bread: Remove the loaf from the oven and let it rest in the pan for 15 minutes. Carefully transfer it to a wire rack to cool completely before slicing.
  9. Serve and Enjoy: Slice the bread and serve. This banana bread is delicious on its own or with a spread of butter or cream cheese. Enjoy and share with friends and family!

Notes

  • Use very ripe bananas for maximum sweetness and moisture.
  • Do not overmix the batter to keep the bread tender and light.
  • If you prefer, substitute buttermilk with plain yogurt or milk with a teaspoon of lemon juice.
  • Check the bread at 40 minutes if using smaller pans to prevent overbaking.
  • For a nutty twist, add 1/2 cup chopped walnuts or pecans to the batter.
  • Store leftover bread tightly wrapped at room temperature for up to 3 days or refrigerate for up to a week.
