Ingredients

Scale

Cheese Mixture

  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Vegetables & Meat

  • 1/2 cup diced pepperoni
  • 1/2 cup diced bell peppers
  • 1/2 cup diced mushrooms

Dough & Seasoning

  • 1 package (13.8 oz) refrigerated pizza dough
  • 1 tsp Italian seasoning
  • 1 egg, beaten (for egg wash)
  • 1 cup pizza sauce

Instructions

  1. Preheat Oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
  2. Combine Filling: In a bowl, mix together the shredded mozzarella, grated Parmesan, pizza sauce, diced pepperoni, diced bell peppers, and diced mushrooms until well combined.
  3. Prepare Dough: Roll out the refrigerated pizza dough on a lightly floured surface to prevent sticking, then cut the dough into 6 equal-sized rectangles for uniform pockets.
  4. Fill Dough: Spoon the cheese and vegetable mixture onto one half of each rectangle, leaving a small border around the edges to allow sealing.
  5. Seal Pockets: Fold the other half of the dough over the filling and press the edges together firmly with a fork to seal the pockets, ensuring the filling doesn’t leak out during baking.
  6. Apply Egg Wash and Season: Brush the tops of the pockets with the beaten egg to achieve a golden, glossy finish after baking, then sprinkle with Italian seasoning for added flavor.
  7. Bake: Place the prepared pizza pockets on the lined baking sheet and bake for 12-15 minutes, or until the pockets are golden brown and cooked through.
  8. Cool and Serve: Let the pizza pockets cool for a few minutes after baking to allow the filling to set before serving them warm and delicious.

Notes

  • You can customize the filling by adding or substituting vegetables like olives, onions, or spinach.
  • For a vegetarian version, omit the pepperoni or substitute with plant-based pepperoni.
  • If refrigerated pizza dough is unavailable, homemade pizza dough works equally well.
  • These pizza pockets are best served fresh but can be reheated in the oven for a crispy finish.
  • Use a pizza cutter instead of a knife to get cleaner cuts on the dough.
