Butter Bean Mash Ingredients

  • 15 g dairy-free ‘butter’ (block margarine; e.g., Flora Plant Butter or Naturli Block)
  • 800 g tinned butterbeans (2 x 400g tins)
  • 150 ml vegetable stock (prepared from 150ml boiling water + 1 tsp stock powder)
  • Salt and black pepper, to taste
  • Juice of 1 lemon
  • 12 tbsp vegan cream or plain yoghurt (optional)

Instructions

  1. Heat the Vegan Butter: Melt the dairy-free butter in a large saucepan over medium heat until fully melted and warm.
  2. Add Butterbeans and Stock: Drain and rinse the tinned butterbeans thoroughly. Add them to the saucepan along with the prepared vegetable stock. Season generously with salt and black pepper to taste.
  3. Simmer Mixture: Cover the saucepan with a lid and let the mixture simmer on medium heat for 5 minutes, allowing the beans to soften and the flavors to meld.
  4. Add Lemon Juice and Cream: Remove from heat briefly and add the lemon juice and vegan cream or plain yoghurt if using. This adds brightness and creaminess to the mash.
  5. Blend the Mash: Use a blender or food processor to blitz the mixture to a very smooth purée. For an extra creamy texture, you can add a splash more vegan cream or yoghurt while blending.
  6. Adjust Consistency: If the mash is too thick, add a splash of water and blend again. If it is too thin, return it to the pan and gently bubble for a minute or two to thicken. Taste and adjust seasoning as desired.
  7. Serve: Once the consistency and flavor are perfect, serve warm as a delicious and nutritious side dish.
