Ingredients

Scale

Brownie Batter

  • 10 tablespoons unsalted butter
  • 1 1/4 cups sugar
  • 3/4 cup plus 2 tablespoons unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon pure vanilla extract
  • 2 large eggs
  • 1/2 cup all-purpose flour

Optional Add-ins

  • 1/2 cup chocolate chips
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat and Prepare Pan: Position your oven rack in the lower third of the oven and preheat to 325ºF. Line an 8-inch square pan with parchment or aluminum foil, then lightly spray with non-stick cooking spray.
  2. Melt Butter Mixture: In a large, preferably glass bowl, combine butter, sugar, cocoa powder, and salt. Set this bowl over a pan of barely simmering water. Stir occasionally until the butter is fully melted and the mixture is well combined.
  3. Cool the Mixture: Remove the bowl from heat and let the mixture cool for 5 to 10 minutes to avoid cooking the eggs in the next step.
  4. Add Flavoring and Eggs: Once slightly cooled, stir in the vanilla extract. Then add eggs one at a time, beating vigorously after each addition until the batter is smooth and very well mixed.
  5. Mix Dry Ingredients: In a separate bowl, combine the all-purpose flour and baking powder, stirring to distribute evenly.
  6. Combine Dry and Wet Ingredients: Add the flour mixture to the chocolate batter and stir very well—approximately 40 strokes by spoon—to achieve the ideal brownie texture without over-mixing.
  7. Fold in Optional Add-ins: If using, gently fold in chocolate chips and/or chopped walnuts into the batter.
  8. Bake: Pour the batter into the prepared pan and bake for 30 to 35 minutes until a tester inserted near the center comes out with moist crumbs attached.
  9. Cool and Serve: Allow the brownies to cool completely on a wire rack before slicing. Store wrapped tightly if not consuming the same day.

Notes

  • Ensure the butter mixture is cooled before adding eggs to prevent curdling.
  • Do not overbake; brownies should have moist crumbs on the tester.
  • Folding in chocolate chips and walnuts adds extra texture and flavor, but they are optional.
  • Use parchment or aluminum foil to easily lift brownies from the pan.
  • Stirring vigorously after adding flour improves the fudgy texture unique to these brownies.
