Base:
- 75g (5 tbsp) unsalted butter, melted
- 1/3 cup (tightly packed) brown sugar
- 1/4 tsp kosher salt
- 1 cup plain (all-purpose) flour
Maple Pecan Pie Filling:
- 1 1/2 cups pecans
- 75g (5 tbsp) unsalted butter
- 1/2 cup (tightly packed) brown sugar
- 1/4 tsp kosher salt
- 1/3 cup real maple syrup (not artificially flavored; honey can be used as substitute)
- 2 large eggs (~55g/2oz each)
- 1 tsp vanilla extract
Decorating:
- 1/3 cup pecans
- 2 tsp maple syrup
- 1 pinch salt
- 1/4 tsp salt flakes (for sprinkling at the end, optional but recommended)
- Preheat and Prepare Pan: Preheat the oven to 180°C/350°F (160°C fan-forced). Lightly grease a 20cm (8″) square pan with butter and line it with parchment paper with an overhang for easy removal later.
- Make the Base: Melt the butter in a microwave-safe bowl. Stir in the brown sugar and salt until combined, then mix in the plain flour until a dough forms. Press this mixture evenly into the base of the prepared pan, using your hands and a spatula for a smooth surface.
- Bake and Cool Base: Bake the base for 20 minutes in the preheated oven. Remove and allow to cool for 15 minutes to keep the crust crisp.
- Toast Pecans for Filling: Spread the 1 1/2 cups pecans on a baking tray and toast in the oven for about 10 minutes, ideally while the base is baking. Let cool, then roughly chop the pecans.
- Prepare Maple Filling: In a small saucepan over medium heat, melt 75g butter. Add brown sugar, maple syrup, and salt. Bring the mixture to a gentle simmer, then remove from heat and allow to cool for 5 minutes. Whisk in the eggs and vanilla extract until smooth, then stir in the chopped toasted pecans.
- Prepare Decorating Pecans: Toss 1/3 cup pecans with 2 tsp maple syrup and a pinch of salt to coat evenly.
- Assemble and Bake: Pour the pecan filling over the baked base and spread evenly. Arrange the maple-coated pecans on top. Bake in the oven for 25 minutes until the filling is set and golden.
- Cool Completely: Remove from oven and cool the bars fully at room temperature for about 2 hours to allow them to set properly. Optionally, refrigerate to speed up the process.
- Serve: Sprinkle with 1/4 tsp salt flakes if desired, then lift from the pan using the parchment overhang and cut into 16 squares. Enjoy as a hand-held dessert or snack.

- Use real maple syrup, not artificially flavored syrup, for authentic taste.
- Honey can be substituted for maple syrup if necessary, but it will alter the flavor slightly.
