Dough
- 2–3 ripe bananas, mashed (The riper the bananas, the sweeter the rolls)
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1/3 cup melted butter
- 1 egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon ground cinnamon
Filling
- 1/4 cup brown sugar
- 1 tablespoon ground cinnamon
Glaze
- 1/2 cup cream cheese, softened
- 1/4 cup powdered sugar
- 1 tablespoon milk
- Preparation: Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper to prevent sticking.
- Make the Wet Mixture: In a large mixing bowl, combine the mashed bananas, granulated sugar, brown sugar, melted butter, egg, and vanilla extract. Mix until the batter is smooth and well incorporated.
- Make the Dry Mixture: In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and ground cinnamon for even distribution of leavening and spice.
- Combine Wet and Dry Ingredients: Gradually fold the dry ingredients into the wet banana mixture until just combined. Be careful not to overmix to keep the rolls tender.
- Roll Out the Dough: Turn the dough onto a floured surface and gently roll it into a rectangular shape approximately 1/2-inch thick.
- Add Filling: Mix together the brown sugar and ground cinnamon for the cinnamon sugar filling. Sprinkle this mixture generously over the rolled-out dough.
- Shape the Rolls: Starting at one edge, carefully roll the dough tightly into a log shape, then use a sharp knife to cut the log into 1-inch thick rolls.
- Arrange for Baking: Place the cut rolls into the prepared baking dish, making sure they are spaced slightly apart for even baking.
- Bake: Bake the cinnamon rolls in the preheated oven for 20-25 minutes, or until they turn golden brown and are cooked through.
- Prepare the Glaze: While the rolls bake, beat together the softened cream cheese, powdered sugar, and milk until the glaze is smooth and creamy.
- Glaze and Serve: Remove the rolls from the oven and immediately drizzle the cream cheese glaze generously over the warm rolls. Serve warm for the best taste and texture.
Notes
- Use ripe bananas for sweeter rolls and better banana flavor.
- Do not overmix the dough to keep the rolls light and tender.
- Make sure the cream cheese is softened before mixing the glaze for a smooth texture.
- Serve the rolls warm; they can be reheated gently if made ahead.
- Leftover rolls can be stored in an airtight container for up to 3 days or frozen for longer storage.
