  • 1 lb twisted pasta (fusilli) or penne, rotini (450g)
  • 3 tbsp unsalted butter, divided
  • 45 cloves garlic, minced
  • 1½ cups heavy cream
  • ½ cup chicken broth
  • 1 cup freshly grated Parmesan cheese
  • 1 tsp Italian seasoning, divided
  • ¼ tsp red pepper flakes (optional)
  • Salt and pepper, to taste
  • 2 tbsp fresh parsley, chopped for garnish

Instructions

  1. Cook Pasta: Bring a large pot of salted water to a boil. Cook pasta until al dente according to package directions. Reserve ½ cup pasta water, drain, and set pasta aside.
  2. Prepare & Cook Chicken: Pat chicken dry; season with salt, pepper, and ½ tsp Italian seasoning. Heat 1 tbsp butter in a skillet over medium-high heat. Sear chicken for 3–4 minutes per side until golden and cooked through. Remove and set aside.
  3. Make Garlic Parmesan Sauce: In the same skillet, melt the remaining butter over medium heat. Add minced garlic and red pepper flakes; sauté for 30–60 seconds until fragrant. Deglaze the pan with chicken broth, scraping up browned bits from the bottom. Stir in heavy cream and the remaining Italian seasoning; simmer for 2–3 minutes. Reduce heat to low and gradually whisk in Parmesan cheese until the sauce is smooth. Be careful not to boil after adding the cheese.
  4. Combine & Serve: Return the cooked chicken and any juices to the skillet, then add the drained pasta. Toss everything together to coat evenly, adding reserved pasta water as needed to reach desired sauce consistency. Taste and adjust seasoning with salt and pepper. Garnish with fresh parsley and serve immediately.
