Bagel Dough
- 2 to 3 cups super fine almond flour
- 1 cup nonfat Greek yogurt (preferably Fage brand)
- 1 large egg
Topping
- Everything Bagel Seasoning (or any preferred seasoning blend)
- 1 additional egg (for egg wash)
- Preheat the oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking.
- Prepare the dough: In a medium bowl, combine 2 cups of super fine almond flour with 1 cup of nonfat Greek yogurt. Stir thoroughly until combined. If the dough is too wet or sticky, gradually sprinkle in more almond flour until it reaches a firm, moldable consistency that is not overly sticky.
- Shape the bagels: Divide the dough into two equal halves. Using your hands, roll each half into a 12-inch long log shape. Then, cut each log into three equal pieces. Take each piece and roll it slightly before forming it into a round bagel shape. Place all formed bagels onto the prepared baking sheet, ensuring some space between each.
- Apply egg wash and seasoning: Beat the remaining egg to create an egg wash. Brush the tops of each bagel with the egg wash to help them brown nicely. Sprinkle your chosen seasoning, such as Everything Bagel Seasoning, evenly over each bagel.
- Bake: Place the baking sheet in the preheated oven and bake for 20 to 22 minutes, or until the bagels turn a beautiful golden brown and are fully cooked through. Adjust the baking time if needed for your oven, ensuring the bagels are not underbaked to avoid crumbly texture.
- Cool and serve: Remove the bagels from the oven and allow them to cool completely before slicing. To enhance texture and flavor, toast the slices before serving. These bagels are delightful with cream cheese or peanut butter. Store leftovers in a zip-top bag in the refrigerator for up to a few days, and toast again before eating.

- Customize the seasoning on top to your liking – garlic, onion, sesame seeds, or just salt work well.
- Toasting the bagels before serving enhances their flavor and texture.
- Store in a sealed bag in the refrigerator; they keep well for several days.
